- 1/3 cup chopped onion
- 1 clove garlic, crushed
- 2 TBSP oil
- 2 cups uncooked rice
- 2 tsp paprika
- 1/2 tsp cyan pepper
- 1/2 cup tomato sauce
- 2 1/4 cup chicken stock
Saute onion and crushed garlic in oil
Add rice and brown coating the rice with the oils over med heat.
Add paprika and cyan pepper, mix to coat rice
Then add tomato sauce and chicken stock mixing well
Cover and simmer over low heat for 20 mins. Fluff with fork, let sit off heat for about 9 mins and enjoy.
This is a great base recipe for burritos, casseroles or anything else you can think of using a spicy rice for.
Swap out the spices with Italian herbs for a completely different flavor or add in different spices and herbs to change things up.
